Super Soup! 

Hello you!

Autumn is here now and isn’t it  just lovely? With Autumn arrives I find a new love for soup! Particularly this souper (see what I did there) Tomato soup! 

I’m not sure where I got the recipe or if it’s even anything special but I wanted to share it with you because a) E LOVES it and it’s packed with veggies and b) It’s Slimming world friendly.

So what’s in it?

1 Large Carrot

1 medium red onion 

1 tin of chopped tomatoes 

1 veggie stick cube made up with a pint of water 

1 clove of garlic 

1 sprinkle of Basil 

As much or as little spinach as you like. ( I don’t add too much because it makes it brown and then E won’t eat it) 

If you want too, Any rogue tomatoes that need eating. We always seem to have surplus tomatoes in this house, is that normal? 

What do you do?

Not much really. Sweat (cook) the carrots, onions, garlic, spare tomatoes in a pan for 5 minutes with some olive oil. I don’t use Fry Light, have you seen what it does to your pans? So I use 2 sprays of olive oil. For those slimming worlders out there. I don’t syn it. This soup recipe makes 3/4 bowls. 

Once this is done throw in your tinned toms, stock, basil and spinach. 

Boil until soft/cooked. Usually about 20 minutes. 

Blend it all up and wala! One tasty, cheap tomato soup with lots of veggies, no sugar and only a little bit of salt.

Season with black pepper if your that way inclined and enjoy!
